Savage Alfa


STYLE: Mixed fermentation sour beer
This is a spontaneously fermented Saison 00, aged in a barrique barrel in which white wine had previously been aged.
The barrel used for Savage Alpha is over 20 years old and in it were aged mostly natural wines that also had a moderate dose of sourness.
The original version of this beer was brewed in 2019, and was already at that time slightly sour, but its full complexity was developed by aging in a barrique barrel. Lower carbonation pointed out its wine trait and gave this sour a slight sourness accompanied by fruit esters.
