STYLE: Wild Sour

Spontaneously fermented beer macerated on homemade organic dried apricots, aged for twenty-four months in Slavonian oak barrels, and then bottle refermented for another year on its own yeasts, without disgorgement, following the principles of the traditional méthode champenoise.

Brewed in the summer of 2022, bottled in the autumn of 2024, and refermented all the way until today (2025). The apricots were sun-dried by us for seven days, allowing additional capture of wild yeasts naturally present in the air.

The aromatic profile brings pleasant freshness, delicate fruitiness, sweet-and-sour apricot jam, and subtle funky notes characteristic of the BrettCave cellar.
