Duality is our already well-known series of wild and sour beers.
The wort for Duality undergoes its first fermentation on wine yeast together with grape juice. After the primary fermentation, the wort is transferred to oak barrels where it undergoes additional fermentation with natural yeasts, of which Brettanomyces is the most common. To each barrel we add fruits and other supplements to obtain various interesting flavours and aromas.
Because of such a creative and inventive approach, Duality is a beer that we try to categorize as a Croatian sour ale, so we hope that Croatia will one day have its own beer style.
