STYLE: Mixed fermentation sour beer
Dark Saison is a sour beer that was also aged in a barrique barrel, this time in which red wine used to be aged before it. Besides Roeselare
blend yeast (the one responsible for sourness and funky aromas), we added prunes and raisins to the beer.
That’s how we achieved extra sugars that raised the alcohol level, which is barely felt. The original version of dark Saison was brewed in 2019. After two months we stored it in wooden barrels and forgot about it for a year.
Fruit complexity, moderate sourness, and woody aromas from the barrel are the main characteristics of this sour beer.
