STYLE: Mixed fermentation sour beer

This Red Saison was aged in the barrique barrel in which Cabernet Sauvignon used to age before him. After emptying the barrel of Sauvignon,
the beer was on the second day already poured in, in order to extract to the maximum the wine aroma and tannins from the wood of the barrel.
Roeselare blend yeast is responsible for the lactic and moderate sourness, accompanied by Brett aromas that gave the beer a touch of berry fruit.
The young oak barrel contributed to the additional complexity of this sour beer and gave it a Flanders-like character.
