STYLE: Mixed fermentation, wine and beer

Duality is our first beer from the series of the same name. A series that explores the boundaries between beer and wine, and the question of what happens when fermentation ignores stylistic definitions.
Duality is a beer that maybe is not. Or maybe it wants to be wine, but somehow remains beer. Confused? So were we.
Fermentation started with wine yeast, after which the beer was transferred into barrique barrels previously used for aging Cabernet Sauvignon. During fermentation, the barrels were left open, allowing wild yeasts from the air to inoculate the beer and establish a microflora that would remain present in future batches.
At the very beginning of the aging process, we further inoculated the beer with our own house blend of microorganisms including Brettanomyces, Lactobacillus and Pediococcus. These have permanently settled in the wood of the barrels and now form part of our Wild Sour identity.
After several months, we added fresh must from Cabernet Sauvignon, enriching the beer with color, tannic structure and vinous aromatics. The total aging period lasted twelve months, followed by bottle refermentation on native yeast without disgorgement.
The result is a fermentation hybrid that blends funky brett character and vanilla from the oak, with gentle acetic acidity, expressive berry fruit and recognizable wine-like tannins. Duality is not for everyone, but it is for anyone looking for something truly different.
