STYLE: Wild sour

Fermentation of this beer began with wine yeast, after which it was transferred to barrique barrels where natural fermentation continued without temperature control and without the addition of commercial yeasts.

For this edition, we used hand-picked figs from the Zadar region, grown completely naturally and without any treatment. The figs contributed not only additional sugars for fermentation but also native wild yeasts present on the fruit skin, which became part of the spontaneous process.

During the long ageing period, Brettanomyces and lactic acid bacteria did their work – consuming residual sugars and developing complex, funky and rustic aromas.

On the palate, dried fig skin takes the lead, followed by bright acidity and a classic brett character. The texture is rounded and smooth, while the fruit expression is deep, ripe and satisfying.

The beer was aged for twelve months in Slavonian oak, then refermented in the bottle for another year on its own native yeast, without disgorgement, following the principles of the champagne method.

Duality 09 is a deeply fermentative beer made for those who seek mature fruit notes, natural complexity and layered funk.
