STYLE: Wild Sour
A spontaneously fermented beer macerated with blueberries, blackberries and raspberries, all grown naturally without any chemical treatments. The beer was aged for sixteen months in Slavonian oak, where fermentation was shaped by wild yeasts, Brettanomyces and lactic acid bacteria that have naturally lived in our Brettcave cellar for years.
Brewed on 21 June 2023, the beer was combined with freshly harvested forest berries during the same summer. The fruit macerated in the beer until October 2024, after which it was bottled for an additional twenty months of refermentation on its own native yeasts and bacteria, without disgorgement.
In total, this beer spent more than three years undergoing natural fermentation, aging and patient maturation.
The aroma profile offers expressive berry fruit, freshness and beautifully rounded acidity, while a moderate Brett character and subtle tannins add depth without dominating the beer. The result is an elegant, layered and highly drinkable Wild Sour that reflects both the natural fermentation process and the fruit from which it was created.
