Brettcave 03: Wild plum
and cranberry


STIYLE: Wild sour
Brettcave is our Wild Sour beer series, launched in 2022. It is named after our cellar, the place where we laid the foundations for this beer style and began our journey into the world of spontaneous fermentation.
Sometimes, inspiration appears when you least expect it.
One day during a brewing session, we stepped outside the brewhouse to make room for a pallet of bottles that was about to arrive. That is when we noticed a tree with fruit we had never paid attention to before. It carried pinkish-white fruit that looked unripe, so we decided to leave it for a while and see what would come of it.
After a few weeks of ripening, the fruit turned a deep reddish-purple. It was mildly sweet, tasty, with a medium-sized pit. We realized it was a wild plum that had been growing in front of our brewery the whole time. We immediately knew it had to become part of Brettcave.
To further enrich the fermentation and the aromatic profile, we added dried cranberries. They contributed gentle fruity acidity and additional layers of fermentation.
Like every Brettcave beer, this one was spontaneously fermented, aged for 12 months in Slavonian oak, then refermented in bottle for another year on its own native yeast. The bottle conditioning follows the principles of the champagne method, without disgorgement.
The result is a dry and floral beer with pronounced Brett character, bright fruit and rose petal notes, a subtle tannic structure, and rustic elegance.
