Brettcave 04: Muscat

STYLE: Wild sour

Brettcave is our Wild Sour beer series, started in 2022. It is named after our cellar, the place where we laid the foundations for this style of beer and began our journey into the world of spontaneous fermentation.

After several beer and wine experiments, including our Duality series that blends beer and natural wine, we decided to take a similar direction once again.

This Brettcave was macerated for nine months on Muscat grapes. The grapes were grown entirely naturally, without any treatment of the vines, the vineyard or the soil. Credit for such clean and expressive fruit goes to the winery Dvanajščak Kozol from Međimurje.

The beer was spontaneously fermented and aged for twelve months in Slavonian oak. It was then refermented in bottle for another twelve months on its own native yeast, following the principles of the champagne method, without disgorgement.

The result is a dry, wild fermented ale with pronounced floral notes, hints of mandarin and elderflower, layered with brett character and lively acidity.
