STYLE: Brett beer
You can never have enough of wild adventures.
During the summer of 2021, we decided to ferment a part of our APA on Brettanomyces yeast. At that time, we still didn’t know what exactly we wanted from this beer. The only thing we knew was that we wanted another beer with Brett!
We hoped for a quick end to the fermentation, because after all, it’s just Brett without bacteria… But it turned out that we were wrong. The fermentation and flavors developed quite slowly, so after some shorter time we said to ourselves: „OK, it is time to forget about this beer“.
The result of our forgetfulness is more than successful! The APA has become a completely different beer. Brett dominates with strong aromas of pineapple and mango, a slight pepperiness from the rye malt follows, and a mild sourness completes this wild beer and makes it pleasant to drink.
