STYLE: Wild sour
For this edition of the Duality series, we added freshly harvested plums from the Vrbovec region. Juicy, aromatic and untreated, the plums were macerated on the beer for nine months, developing a layered profile that blends ripe fruit character with the raw edge of wild fermentation.
The aroma is driven by fruit-forward and wild funky notes that naturally come from Brettanomyces. On the palate, the freshness from acidity is balanced by the sweetness and depth of the plums, while the finish brings in fine tannins from the Slavonian oak, creating a structured and well-rounded wild ale.
Fermentation was completely spontaneous, with no commercial yeast added. The beer aged for twelve months in Slavonian oak, followed by bottle refermentation on native yeast for another year, with no disgorgement, using the principles of the champagne method.
The result is a fruity and pleasantly sour beer, with expressive brett funk, soft tannic grip and the rustic charm of nature-shaped fermentation.
