STYLE: Wild sour

With this edition, Duality enters a new chapter. From now on, all future Duality beers will be based exclusively on grapes. This marks a full commitment to spontaneous fermentation, with the primary fermentation taking place entirely in wooden barrels, without any added yeast. These barrels have become home to our native microflora, wild yeasts and lactic acid bacteria nurtured and developed through years of fermentation and aging.

The fermentation of this beer began with the addition of organically grown, untreated Merlot grapes. In addition to their deep red color and fruit-forward character, the grapes carried their own wild yeasts, which kickstarted the spontaneous fermentation process. This approach reinforces the natural identity of the beer and the core philosophy of the series.

The grapes macerated in the beer for six months, releasing tannins, rich fruit aromas, and textural depth. The result is a bold, layered and playful beer where the juicy fruitiness of dark berries, vibrant acidity, and wild Brett complexity come together in untamed harmony.

Fermentation took place entirely in wooden barrels, followed by refermentation in the bottle for twelve months, using only the beer’s native yeasts, with no disgorgement, following the principles of the méthode champenoise.

Duality 10 is the beginning of a fully natural and wine-driven dimension of our beer universe.
