STYLE: Wild sour

The Duality series continued in 2022, this time taking a fruit-forward turn with apricots from small family orchards in the Zagorje region.

The apricots we used were among the best we have ever tasted – jammy sweet, juicy and aromatic, just like the beer they helped create. They were macerated directly on the beer for nine months, naturally blending with the wild fermentation and adding extra layers of wild aroma and depth.

The aroma profile evokes a sweet and tart apricot and peach jam, while the taste offers a balanced interplay of apricot fruit, Brett character and gentle tannins from Croatian Slavonian oak barrels. The beer is delicate, moderately sour, fruity and exceptionally drinkable.

Fermentation was spontaneous, without any added commercial yeast. The beer aged for twelve months in Slavonian oak, then refermented in bottle for another year on its own native yeast, without disgorgement, following the principles of the champagne method.

The result is a mature, elegant and playful wild ale, where the fruit character of the apricot and the rustic intensity of Brett fermentation meet in perfect balance.
