Brettcave 05: Amula

STYLE: Wild Sour
A spontaneously fermented beer, aged for one year in oak barrels, without the addition of commercial yeasts or temperature control. After that, the beer referments in the bottle for another year on its own native yeasts, following the principles of the traditional champagne method, but without disgorgement.
The fermentation includes hand-picked Amula plums, an old wild variety that grows freely in the forest, completely untreated. The fruit macerated in the beer for six months, deepening the layers of fermentation and introducing wild yeasts naturally present on the skin of the Amula plum.
The profile is dry, mildly sour, and rustic, with pronounced funky notes and Brett character. The aroma spectrum includes ripe fruit, earthy and leathery tones, and delicate volatile acidity.
