STYLE: Wild sour
For Duality 08, we added locally grown pears, cultivated completely naturally without any spraying or treatment. Their delicate fruit character and natural sweetness blend seamlessly into the lightly acidic base of the beer, creating a rounded, elegant and refreshing profile.
Wild yeasts naturally present on the pear skins joined the fermentation spontaneously, adding depth and aromatic complexity. On the nose, ripe pear leads the way, supported by subtle funky notes, while on the palate, sweetness and acidity remain in fine balance, ending with a light and playful fruit finish.
Fermentation was mixed and spontaneous, initiated through natural inoculation without any commercial yeast, and carried out in wooden barrels. The beer aged for twelve months in Slavonian oak, then refermented in bottle on its own native yeast for another year, with no disgorgement, following the principles of the champagne method.
Duality 08 shows the gentler side of wild fermentation – drinkable, aromatic and lightly sour, yet complex enough to satisfy curious palates.
