Štrukli Mlinarica

„Štrukli“ or „zagorski štruklji“ are a very well-known Croatian specialty that comes from the region of Zagorje, also typical for the city of Zagreb. Štrukli are Mlinarica’s delicacy that one should not miss.
As you already know, we make most desserts ourselves, so štrukli are also made by the diligent hands of the Mlinarica crew.
Štrukli are composed of dough and filling. The štrukli dough is drawn dough, and we prepare it as follows: flour, water, eggs, oil, and a bit of salt we first mix in one bowl.
We then knead the dough, and when it starts to separate from the hands we know that we got it smooth and that all the ingredients are well combined.
From the smooth dough obtained in that way, we then make one large ball and we let it stand for about 30 minutes. 
In the meantime, while the dough is maturing, we start making the filling. We make it by mixing together cheese, eggs, sour cream, salt, and corn flour.

After the dough stood its 30 minutes, we roll it out with a dough roller or rolling pin on a floured tablecloth.

After rolling out the dough with a rolling pin, we start „pulling“ it with our own hands.
We do this by now „pulling“ the previously rolled dough from the bottom of the dough with our fingertips while being careful that it does not crack. The dough is in that way being spread all over the table, and we need to roll it out as thin as possible.

The dough will, while we roll it out, get slightly thicker edges, which we need to remove.
When the dough is properly stretched, it is time to start putting the filling. We put the filling on the edge of the dough that is closer to us.

We now start carefully rolling the dough, together with the tablecloth, from the edge closer to us to the far edge of the dough.
The rolled dough is then cut to the desired size. Here it is important to cut the dough with a plate, for the edges of the dough not to stick to each other.

The štrukli we have cut are now being put in the boiling water and cooked until they come to the surface of the water.
It is best to prepare the štrukli with bread crumbs (prezli). We make them by first putting butter on a heated pan, on which, when the butter melts,
we put bread, i.e. bread crumbs.
We then roll the cooked štrukli in the bread crumbs. We put štrukli on a plate, pour over the sour cream, and then serve.
