Kiselo je! Izraz je koji ste mo\u017eda \u010duli, a mo\u017eda ste i koji put nai\u0161li na kiselo ili pokvareno pivo, no kada je pivo kiselo to ne mora i nu\u017eno zna\u010diti i da je pokvarena. Na na\u0161im prostorima naj\u010de\u0161\u0107e se proizvode kettle sour piva, a to bi zna\u010dilo sljede\u0107e: Prilikom proizvodnje craft piva odradimo po\u010detne korake kao i kod svakog piva. <br \/>Kre\u0107emo sa ukomljavanjem, zatim cije\u0111enjem sladovine i onda tek idemo na kiseljenje. Kiseljenje ide tako da \u010distu sladovinu prebacimo u kotao za kuhanje, na kratko prokuhamo sladovinu i zatim spu\u0161tamo temperaturu na 36C-38c, ubacujemo mlje\u010dnu bakteriju imena Lactobacillus i kre\u0107emo sa kiseljenjem.<\/p><p>Kako bi uklonili rizik ne\u017eeljenih aroma i okusa trebamo propustiti CO2 kroz sladovinu i istjerati ve\u0107inu kisika koji je prisutan u sladovini. Na 36C-38C se Lactobacillus bakterija po\u010dinje razvijati te svojim razvojem daje izra\u017eenu kiselinu.<br \/>Postoji vi\u0161e sojeva Lactobacillusa koji daju ja\u010du\/slabiju kiselinu i svaki soj daje svoje specifi\u010dne arome pivu. Razvoj Lactobacillusa u sladovini obi\u010dno traje oko 24h i PH sladovine se spu\u0161ta na 3.3.<\/p><p>Kada smo skiselili sladovinu i spustili PH tada na\u017ealost moramo i ubiti Lactobacillus zagrijavanjem sladovine na 100C i po\u010dinjemo sa kuhanjem. Lactobacillus ubijamo iz tog razloga \u0161to nam mo\u017ee napraviti probleme u hladnome djelu pivovare, fermentorima i cijevima te se<br \/>&#8220;zavu\u0107i&#8221; negdje i skiseliti ostala piva. \u0160anse za to nisu velike jer mlje\u010dnu bakteriju ubijaju visoke temperature i gorka piva poput IPA-e, tolerancija za hmelj mu je jako niska i ometa daljnji razvoj bakterija, ali opreza nikad dosta.<\/p><p>Nakon kuhanja ostatak postupka je isti kao i kod svakog piva. Najpoznatiji takav kvasac je Philly Sour (Sourvisiae).<br \/>Ovaj na\u010din kiseljenja piva je jednostavniji, efikasniji i br\u017ei, ali se ipak osjete razlike u okusu u odnosu na kettle sour piva.<\/p><p>Philly Sour nam pojednostavljuje na\u010din proizvodnje, ali od njega ne dobivamo jako izra\u017eenu kiselinu, ali zato dobivamo lijepe vo\u0107ne i breskvaste estere koje proizvodi. Ali nije samo Belgija skladi\u0161tila svoja piva na ovaj na\u010din ve\u0107 i ostatak pivovara po Europi. Kakva su u to vrijeme piva bila nitko ne mo\u017ee znati, ali znamo da je Belgija jedina u svijetu nastavila tim putem. Neke pivovare danas u Belgiji poput 3 Fonteinen, Cantilliona i ostalih, proizvode samo takva kisela piva njeguju\u0107i svoju tradiciju.<\/p><p>U dana\u0161nje vrijeme se takva piva proizvode na kontroliraniji na\u010din, danas mo\u017eemo imati izolirane bakterije i kvasce, a ne nadati se da smo uhvatili one dobre i pusti ih da se razvijaju u pivu. Glavne bakterije za razvoj kiseljenja piva su: Lactobacillus i Pediococus.<br \/>U kettle sour pivima Lactobacillus ubijamo dok u ovim kiselim pivama ne, nego ga ostavljamo u pivu.<br \/>Ali za\u0161to bi uop\u0107e pili piva koja su sebi imaju bakterija? Osim bakterija u ovakvom kiselom pivu nalazimo jo\u0161 jedan<br \/>zanimljivi kvasac \u2013 <strong>Brettanomyces.<\/strong><br \/>Brettanomyces je toliko sna\u017ean, jak i prilagodljiv kvasac koji mo\u017ee pre\u017eivjeti u jako izazovnim uvjetima. Isto tako za &#8221;Brett&#8221; se ka\u017ee da je i divlji kvasac i mnogi misle da proizvodi kiselinu \u0161to i nije posve to\u010dno.<br \/>Brett mo\u017ee proizvoditi octenu kiselinu u malim dozama samo kada je prisutna visoka koli\u010dina kisika u pivi ili sladovini.<br \/>Brett je kvasac, a ne bakterija, a glavna mu je zada\u0107a u proizvodnji kiselih piva da pojede dekstrine (\u0161e\u0107eri koje obi\u010dni pivski kvasac ne mo\u017ee pojesti).<br \/>Du\u017eim odle\u017eavanjem Brett mo\u017ee razviti razne vo\u0107ne estere poput ananasa, jabuke i kru\u0161ke, a isto tako razvija i fenole koji mogu biti pikantnih i &#8221;funky&#8221; aroma. Brett jede sve pred sobom bilo to dobro ili lo\u0161e i radi od tog ono najbolje. <br \/>Ovo se odnosi samo ako imamo dobar Brett u pivu jer postoje i ne ba\u0161 tako sjajni sojevi Bretta.<\/p><p>Za ve\u0107inu vinara je Brett neprijatelj i ne mogu ga smisliti, a i kod pivara nije previ\u0161e druk\u010dije, ali kad se naprave piva koja su od samog po\u010detka planirana da budu kisela i da imaju dobrog Bretta u sebi onda dobivamo predivne okuse i arome.<br \/>Za kraj ne smijemo ni izostaviti ba\u010dve u kojima kiselo pivo odle\u017eava. Ba\u010dve mogu biti razli\u010ditih tipova drveta. Kao i kod vina naj\u010de\u0161\u0107e se koristi hrast iz Francuske, Ma\u0111arske ili Amerike i svaki daje razli\u010dite arome. U Mlinarici koristimo isklju\u010divo slavonski hrast koji se pokazao me\u0111u ba\u010dvarima i ba\u010dvarskim znalcima \u010dak i bolji od nekih koji su navedeni. Ba\u010dve koje su ra\u0111ene od Slavonskog hrasta se izvoze i u Francusku i jako dobro su prihva\u0107ene kod puno vinara.<\/p><p>Isto tako i starost ba\u010dve odre\u0111uje okuse u pivu, pa tako ba\u010dve koje su potpuno nove dosta brzo ispu\u0161taju jake tanine, dok ba\u010dve koje su kori\u0161tene vi\u0161e puta su malo mek\u0161e i ispu\u0161taju uravnote\u017eenije tanine u pivu. Kako bi bakterije, kvasci i ba\u010dva dale svoj puni potencijal ovakva piva moraju odle\u017eavati dugo obi\u010dno oko godinu dana.<br \/>Barrel aged sour beers imaju dugu povijest, a dana\u0161nje pivovare opet o\u017eivljavaju takve stilove, eksperimentiraju i stvaraju nove stilove kiselih piva. Spontana fermentacija se odvija u posebnom bazenu koji se zove Coolship. Coolship je obi\u010dno smje\u0161ten u potkrovlju pivovare okru\u017een sa drvenim gredama iz tog razloga \u0161to se u drvu lak\u0161e zadr\u017eavaju bakterije i kvasci koji su prisutni u prostoriji te na taj na\u010din potpoma\u017eu u odra\u0111ivanju fermentacije.<\/p><p>Spontanu fermentaciju mo\u017eemo odraditi tako da pustimo pivo u Coolshipu otvorimo sve prozore gdje je smje\u0161tena sladovina i pomolimo se da \u0107emo uhvatiti dobar kvasac i bakteriju koja \u0107e odraditi dobru fermentaciju. Ovaj na\u010din je dosta rizi\u010dan, neizvjesan i lako je mogu\u0107e da nam ne uspije, ali mo\u017eemo umanjiti te rizike. Klju\u010dni faktor u hvatanju dobrih divljih kvasaca i bakterija je vanjska temperatura i okru\u017eenje.<\/p><p>Preko ljeta je malo te\u017ee da \u0107emo i\u0161ta dobro uhvatit, temperature su previsoke i mogu\u0107e je da nam uleti Acetobacter koji ne \u017eelimo jer on \u010dak jede alkohol i pretvara ga u kiselinu. Zima je pak prehladna jer su kvasci i bakterije skoro pa i neaktivni u to vrijeme, dok nam prolje\u0107e ve\u0107 obe\u0107ava hvatanje nekih dobrih kvasaca i bakterija.<br \/>Tokom lock downa u prolje\u0107e 2020.godine u Mlinarici smo napravili smo jednu manju \u0161ar\u017eu sladovine i ostavili je 48h vani u blizini jedne livade da probamo uhvatiti dobre kvasce i bakterije. Nismo znali da li \u0107e biti dobro ili ne, ali smo se nadali da \u0107e biti dobro i nismo pogrije\u0161ili.<br \/>Fermentacija ove pive je trajala jako sporo jer je u nastajanju razvoj novih kvasaca i bakterija i bilo je odvratnih aroma poput povra\u010dotine, ali nakon nekog vremena kad se Brett krenuo sve vi\u0161e i vi\u0161e razvijati dobili smo predivne arome i limunsku kiselinu. Za na\u0161u spontanu<br \/>fermentaciju trebalo je oko godinu dana i isplatilo se \u010dekati.
